This is an exciting, rare oil from an uncommon Italian variety that is unsurpassed in quality. It is quite robust with strong pungency that tickles the throat, without much bitterness, and strong fruitiness for a perfect balance. It has a fantastic, floral aroma that follows through in flavor with some ripe character, but it is dominated by herbaceous spiciness. The strong green apple and black pepper flavors highlight a complexity of various green characteristics.
